Ski Weekend
That’s my friend, Jenn! This past weekend I tagged along with her and her husband to go skiing at Camelback Mountain in Pennsylvania. I was terrified as we drove up, since the temperature wavered between 12 and 15 degrees. But on the mountain the sun was out and it wasn’t windy, so it ended up being perfect skiing weather. I hadn’t skied in two years, so it was nice to get back out there. I always forget how much I love it!
Seeing Jenn on the terrain park definitely wants me to give snowboarding a shot. It’s “supposedly” easier to do tricks, and I’ve busted my fair share of a**es trying to do them on skis. Since I’m already a good skier it would probably be frustrating to start from scratch.....buuuuut, I’d be willing to give it a shot if I got to take jumps like these. (Don’t worry...you’ll get video.)

It should go without saying, but I am PUMPED about the next few months! I think the best way to make it through NY winters, is to know when you’ll be getting out of it!
In 3 weeks, I’ll be heading to Destin to spend time with my family - and most importantly some quality time with my youngest nephew, Taylor (1.8). My sister and husband are taking my older nephew Brannon (4) to Disney World, which leaves Taylor as the sole recipient of our attention. And we’re WAY more fun than Disney World!
You Fancy, Huh?!?
I must’ve been hungry on my home from work tonight. While cutting through Chelsea Market, a cool, crisp looking cucumber caught my eye. Mmmmmm...Greek salad. So, I turned around and picked up the necessities: a tomato, that charming cucumber that had seduced me into his store, and some feta cheese. And since I’m already in the cheese department...
I saw an amazing herbed goat cheese that I couldn’t pass up. I had made omelets last weekend and kicked myself for not having any in the house. Well, I wouldn’t make that mistake twice.
However, as I walked past Amy’s Bread, I changed my mind and picked up a baguette. This cheese was going to eat this tonight! I remembered a quick trick I used to do, that is ridiculously easy, but tastes amazing. (If you love goat cheese, of course.)
Put the goat cheese in a small ramakin - or any other oven safe container. This cheese already had garlic and herbs mixed in, but you can add anything. Candied nuts...berries...whatever.

Put it in the oven on broil until the top browns. (You can even leave it in longer than I did.) The cheese comes out warm and easily spreadable. And if you’re lucky enough to have a “skinny baguette” purveyor in your town, then you can cut bite-sized bread slices like these.
